When I launched API Design Matters, one of my reasons was the lack of good API examples out there. "Pet Store" got an early foothold and unfortunately has been pervasive when authors discuss OpenAPI and API Design. I wrote in The Language of API Design
Speakeasy has also offered an example OpenAPI, the Speakeasy Bar API. It's vendor (brand) specific, so not on the same level of openness as the Train Travel API or Museum API. I've not evaluated it. It's embedded in a larger work on learning OpenAPI - see https://www.speakeasyapi.dev/openapi/info
